2020, Food Research InternationalCitation Excerpt :According to the previous reports, 2-hydroxyisovaleric acid is present in wine and other biological matrixes such as honey (Elisa, Ricardo, & Vicente, 2015). It is formed by the reduction of 2-oxocarboxylic acids, which results from the oxidative desamination of the amino acid valine (Liebich & Först, 1984). Furthermore, 3–phenyllactic acid (PhLA), 4–hydroxyphenylacetic acids (4–HPA), and 3–methylsalicylic acid (3–MSA) are classified as the aromatic hydroxy acids.
